Fried Rice

On days when there are guests, or on special occasions when there is more food than usual, there will be leftovers. To use up the leftovers, the following day is usually fried rice, either for lunch or dinner.

Fried rice is a popular dish here. It is a simple dish of rice stir-fried with ingredients. The ingredients vary. Therefore, all fried rice are different. It’s up to the establishment - if it is a restaurant, they might want to have their own special ingredients and make it their ‘signature’ dish. For the household, the ingredients would be leftovers from the day before. As such, it is a simple dish to prepare. All you need is some rice, and then you add in the ingredients that are available.

This was one of those days. There was some leftover rice, and I used it to make fried rice for lunch. There were no other dishes leftover – just some rice. I used an egg, some ham and half an onion for ingredients.

Usually people will just break the egg over the rice while frying, but I like my eggs scrambled first.
Preparation.

Heat up the wok. Add some oil, add in the onion, add in the rice, and give it a good fry. Add in the scrambled eggs and the ham. Add a bit of salt, or dark soya sauce – if you prefer, and have. Add a dash of pepper if you like. And viola, a fried rice dish. Simple, fast and easy.

Basically, that is how you do a fried rice dish. You can add whatever ingredients you like. It is up to you. Do the dish a couple of times, and you will know what goes well with what, and you would have perfected your own fried rice dish.

But if you were like me, it doesn’t matter what ingredients there were. Just throw all the leftover into the wok, and give it a good tumble. It will all be good.

You can pre-cook the rice to prepare a fried rice dish, and prepare all ingredients from raw, if you like. But that sounds like a lot of work for a ‘common’ fried rice dish.
